About Pausa Pranzo Owner Mauro Sanna was born in Sardinia and has been living in Melbourne since 2012. After working in various hospitality jobs, the idea for Pausa Pranzo was born in early 2016 when he struggled to find the type of classic, simple lunch he so loved in Italy – the humble PANINO. From his university days in Florence where tiny hole in the wall paninotecas would have people lining up down the street, he set about bringing this staple to Melbourne along with some classic salads and starters. Traditional Sardinian cheese ravioli and fresh pasta that he grew up watching his aunties and nonnas making is a passion of his. Fresh, simple, quality food is what Pausa Pranzo is passionate about and excited to bring to you. Taking 2016 to find the best ingredients and suppliers and test the market, Pausa Pranzo is ready to officially launch in 2017.
